BBQ Grilling Recipe Ideas: Grilled Chicken With Blueberry Mustard Sauce

This recipe will make four servings of grilled chicken with blueberry mustard sauce. However, if you need more, simply double the ingredients to serve eight individuals.

Recipe for Grilled Chicken with Blueberry Mustard Sauce
What You Need

  • 4 Tablespoons lemon juice
  • 4 boneless chicken breasts
  • 2 teaspoons dry mustard
  • 2 Tablespoons honey
  • 2 cups blueberries
  • 3 Tablespoons vegetable oil
  • 1 cup diced onions
  • 2 Tablespoons Dijon mustard
  • 5 Tablespoons white wine
  • ¼ teaspoon cinnamon
How to Make It
Rinse the boneless chicken and place it in a colander to drain and then pat it dry with clean dry paper towels. Prepare a plastic zip locked food bag by adding 2 tablespoons lemon juice, the dry mustard and 1 tablespoon vegetable oil. Shake well. Place the chicken breasts into the zip locked bag and place in the refrigerator overnight to marinate or for at least 3 to 4 hours before grilling.

Prepare the grill with white hot coals and then arrange the marinated meat on the grill. Cook until done or until there are no pink colored juices. Do not overcook. Remove from grill while the meat is still tender.
While the meat is grilling you can prepare the blueberry mustard sauce by dicing the onion into small pieces. Saute the diced onions in 2 tablespoons vegetable oil until the onions are translucent. Stir in the Dijon mustard and white wine until well blended.

Add the blueberries and remaining lemon juice. Stir well and then add the honey and cinnamon. Stir and allow the mixture to simmer until the blueberries are tender and soft.
Diagonally slice the grilled chicken breast diagonally. Arrange them a large serving platter or dish and then drizzle the blueberry mustard sauce over the chicken evenly.
